    Abstract: 本研究目的在:一、探討咖啡廳經營者的實務能力及專業知識。二、設計咖啡廳經營者實務能力的專業訓練課程。三、設計相關訓練課程作爲未來研究者的指標。將採用德爾菲問卷調查法與晤談指引法,以立意抽樣方式抽取學者專家三十人,其中來自學術界有13人,餐飲業界有17人。本研究將咖啡廳經營者實務能力分爲基本能力及核心能力進行研究調查。並依研究結果做建議,作爲學術界及業界之參考。
    The objectives of this study are to: 1. explore the practical competence and professional knowledge of the coffee shop managers, 2. design professional training courses for the coffee shop managers, 3. design relative training courses as an index for future researchers. This study employs Delphi questionnaire survey with interview guide approach. Convenience sampling is used to survey 30 professionals, including 17 respondents from the academic and 13 respondents from the hospitality industry. This research studies coffee shop managers' practical competence, including their basic competence and core competence. As references for the academic and coffee shop business, suggestions are made based on the research findings of this study.
