    Abstract: 隨著經濟快速成長與個人所得大幅提升,現代人喝咖啡除了講求「咖啡豆」的質與量外,也開始注重咖啡廳之服務品質、氣氛及設計風格。本研究為利用問卷調查方式探討消費者對特色咖啡廳產業業者所提供之服務品質要素的重要度和滿意度。然後運用重要度-績效度分析發現3個優先改善之服務品質要素,分別是「停車空間足夠」、「動線及位置規劃良好」及「餐飲價格合理」。本研究結果將可提供給特色咖啡廳產業做為改善及提升服務品質的參考依據。
