    Title: 銀耳(Tremella fuciformis)多醣體量產關鍵技術及機能性產品之開發-高多醣體銀耳品系子實體量產關鍵技術研究

    Abstract: 銀耳(Tremella fuciformis)又稱白木耳,為我國重要食藥兩用之菇類之一,主要產區在中國,大陸年產10,000 噸,多以棉子殼人工栽培,台灣尚無利用太空包生產銀耳之成功例子,故用量雖大,卻全部由大陸以乾燥子實體進口。唯大陸進口銀耳,衍生三種問題:(1)棉子殼含棉子酚成分,具強烈毒性及男性不孕等問題。(2)白木耳以SO2 處裡以防變色及腐爛,具有毒性。(3) 2009 年元月16 日報載消費者基金會檢測大陸進口白木耳全部含殺蟲劑歐殺松或陶斯松等農藥問題。以上問題,使大陸進口銀耳全部下架。如能在台灣量產銀耳並形成產業以供應優質低價安全之銀耳子實體,並發展防癌、美容、保健等加工產品,其商機無限。
    申請者初步研究可利用太空包生產銀耳子實體,並分離其伴生菌經鑑定為香灰菌(Hypoxylon acheri),但兩者之間關係至今鮮少深入研究,國際上發表文章亦不多,且台灣尚無銀耳量產之品種及技術,本計劃除生產安全銀耳子實體供本整合型計畫之其他子計畫研究所需材料外,希望於三年內建立高多醣體銀耳子實體量產體系,以發展台灣之銀耳產業;第一年執行銀耳品系之收集,誘變及雜交育種;篩選優良香灰菌菌株;探討香灰菌與銀耳間之關係及作為菌種之白毛菌絲團之形成因素,第二年除繼續進行經誘變及雜交育種之品系選拔及其生長特性外並探討白毛菌絲團生長與子實體出菇關係。第三年則將育種選拔之優良品系,進行太空包量產比較,以選拔高產、高多醣體之品系;探討不同鋸木屑基質配方對子實體產量之影響,以及形成子實體所需之光線、温度、濕度、CO2 量等,以及其病蟲害防治方法。

    The silver ear mushroom , Tremella fuciformis. was discovered in Mainland China . It is an important and popular medicinal and gourmet mushroom in Asia where it is best known by its Chinese name . Silver ear mushroom was cultivated in the artificial log of cotton seed hull.
    All of silver ear mushrooms sold in Taiwan were imported from Mainland China , some problems were arisen from the imported mushrooms : (1) cotton seed hull contained gossypol which was toxic. (2) mushroom was treated with SO2 .(3) all of silver ears were polluted with residues of insecticides Therefore, it is worthy to develop the industry of silver ear mushroom, and provide the save and high quality of mushroom to the consumers of Taiwan.
    This study try to established the system of mass production of silver ear mushroom within three years , including (1) to breed the suitable varieties for growing in Taiwan. (2) to select the companion fungus, Hypoxylon archeri and understand its effect on fruiting of silver ear. (3) to study the favorable environment and best formula of substrate for growth of the mushroom . (4) to establish the automatic cultivation system of silver ear mushroom .
