    Abstract: This research attempts to take each owner from different type coffeehouses as pilot case by purposive sampling, and through their recommendations to get total 15 coffeehouses as research object. The most coffeehouses are 1-5 years of store, less than 5 employees, more than 15 tables, less than 720 square feet, and has a more than 500,000 dollars avarange moth turnover. The research uses interview content and secondary datas to get the industry value chain for coffeehouse,? Raw Material Obtaining ?Manufacture and Roasting? Brand?Sale?Merchandise ?Customer?. And then taking industry value chain as main category induces ?Standardization: high-low? and ?Know-how: high-low? for the criteria to obtain ?Leader, Copy, Independent and Dependent?four entrepreneurial models of coffeehouses. The classification will be offered to the people who intend to operate coffeehouse in the future. As the command of standardization and Know-how, they decide which operational model to adopt. The criteria can be provided for future related study such as research.
