Due to the aging population of Taiwan society, the cognition and the demand of personal health care for people are increasing. Government speeds up promoting and researching health food through cooperating with industry and academics. Therefore, the health food will become the most fast-growing industry in the future. However, few considerations about elderly people’s using habits were taken in most health food packaging. No studies have been found to focus on the health food packaging through universal design or visual ergonomic. In this study, Universal Design is applied on the packaging design of health food. Four stages are included: literature analysis, depth interviews, building up and verification of universal design principles. We try to verify the application of universal design in the feasibility of health food packaging. This study attempted to use universal design principles to build on the health food packaging design, and four-stage method was adopted to carry out the whole process. Firstly, the researcher analyzed domestic and foreign literature reviews on universal design and understood and summarized the domestic health food packaging and existing regulations. Secondly, In order to obtain the current issues on health food packaging as preliminary design guidelines for improvement, in-depth interviews with those over the age of 65 were performed. With the results from the second stage, coupled with seven principles of Universal Design and three supplementary articles, and the checklist in ISO Guide71, the research did the integration and induction to find out a universal design principle for health food packaging. Rank order was used in experimenting. Senior citizens were invited to do assessments before and after food packaging improvement. Afterwards, a cross-analysis of universal design principles with this finding from the experiment was conducted to attain specific conclusions of universal design applied in health food packaging The purposes of the study are to: 1. understand the status of packaging design of health food, 2. confer the current health food packaging design through universal design, 3. establish the standards of health food packaging by universal design, and 4. improve design and experimental testing, search for mutual authentication for the theory and practice, and find the optimal design. This research can provide both health food packaging for industry and a teaching example for academic.
