    Title: 民眾對餐廳消防安全認知與態度之研究

    Abstract: 台灣民眾外食人口持續增加,餐廳經營者需要提供一個安全無虞的用餐環境給民眾使用。然而,意外總是出乎意料,一旦發生火災時,消防安全觀念的提高,對於火災發生時絕對有其效益,因此,本研究探討民眾對於餐廳消防安全認知與態度進行研究。本研究採用問卷調查法,於民國112年3月16日至04月15日間以自填式google表單發放網路問卷,並以便利抽樣及滾雪球法蒐集問卷,取樣對象為超過18歲以上之一般民眾,回收300份,因為網路問卷,所以回收率為100%。研究發現,民眾對餐廳消防安全認知共有13題,全對者佔4.7%;而最多人答對總題數為10題,佔27.7%,顯示出民眾對餐廳消防安全知識不足;受訪者的職業方面軍警、公教對消防安全認知答對題數明顯高於學生與服務業族群;受訪者教育程度越高,對消防安全認知答對題數越高。態度方面,民眾對「為了公共安全,遵守餐廳場所的消防安全規定是應該的」持有的態度平均數為第一名,顯示受訪者認為餐廳場所業者應有責任建構一個安全無虞的用餐環境,以維護民眾用餐安全。消防知識的建立,不能單純只靠餐廳業者,亦須建立民眾正確的消防安全觀念,才能有效提升自我保護的能力。本研究貢獻,可作為餐廳業者、社區中心、政府、教育單位等參考,透過有效的消防安全教育宣導,降低火災來臨時,能夠做好滅火、逃生,以便於減少人命的傷亡。
    The number of people eating out in Taiwan continues to increase, and restaurant operators need to provide a safe and secure dining environment for the public to use. However, accidents are always unexpected. Once a fire occurs, the improvement of fire safety concepts will definitely have its benefits. Therefore, this study explores the consumers’ cognitions and attitudes towards fire safety of restaurants. A self-filling google form was used to distribute online questionnaires, and the questionnaires were collected by convenience sampling and snowball method. The sampling object was the consumers with over 18 years old, and 300 valid samples were collected. Because this was an online questionnaire, the recovery rate was 100%.The results of this study were followings:There were 13 questions for surveyed consumers’ cognitions towards fire safety of restaurants, and 4.7% of them answered all the questions correctly; the most respondents answered 10 questions correctly, accounting for 27.7%, which shows that the consumers had insufficient knowledge of fire safety in restaurants. In terms of consumers’ occupations, the numbers of correct answers for the military, police, and teachers consumers’ cognitions towards fire safety of restaurants were significantly higher than those for students and service industry groups. The higher education levels were the consumers’ education, the higher numbers were the correct answers towards fire safety of restaurants. The average number of consumers’ attitudes toward “For the sake of public safety, it is necessary to abide by the fire safety regulations of restaurants” was the first, indicating that the respondents believed that restaurant operators should be responsible for creating a safe and secure dining environment to maintain public safety. The establishment of fire protection knowledge cannot be solely relied on by restaurant operators. It is also necessary to establish the correct concept of fire safety among the public in order to effectively improve the ability of self-protection. The contribution of this research can be used as a reference for restaurant operators, community centers, governments, educational institutions, etc. Through effective fire safety education and publicity, it is possible to reduce the number of fires when they come, and to be able to do firefighting and escape, so as to reduce casualties.
