摘要:	全球咖啡產值超過千億美元，亞太地區為咖啡市場成長最快速的地方，而臺灣非連鎖式之精品咖啡館消費雖然不是最大的比例，但發展潛力讓人期待，本篇研究從實務角度探討在臺灣花蓮美崙地區開設非連鎖咖啡店的風險評估過程。本研究從風險管理角度，結合質化與量化分析，邀請6位產官學專家進行名目團體會議，辨識確認5大風險構面與21項風險因子，序經20位微型創業者的層級分析檢測、咖啡產業環境分析，風險評估矩陣等，最後依據筆者之主客觀條件作出決策，本研究在風險評估過程與分析技術可作為未來非連鎖咖啡創業者的決策參考。 Global coffee production value is more than 100 billion U.S. dollars. Specifically, Asia-Pacific region is probably the fastest-growing place worldwide. Although the non-chained boutique caf? consumption is not the largest proportion in Taiwan, its potential is highly foreseeable. This study employed risk management technique, with a combi-nation of qualitative and quantitative methods, to identify, analyze, and assess the poten-tial risk of starting a non-chain caf? in Meilun, Hualien county. This study invited 6 experts to participate in a group nominal meeting, in order to identify and elicit 21 risk factors. Then it built hierarchy of risk factor with 5 risk con-structs by reaching a consensus from the 6 expert interviews. Next, twenty micro-entrepreneurs were invited to complete the survey which was conducted for obtaining the weights of the 21 risk factors. Meanwhile, environmental analysis, i.e., PEST analy-sis, five force analysis, SWOT analysis was applied at risk analysis level for better un-derstanding of the non-chained caf? industry in Meilun, Hualien county. Finally, the entrepreneur was asked for completing risk assessment matrix according to the subjec-tive and objective circumstance. As a result, this study might contribute to the practice of risk evaluation field while the entrepreneurs are going to start a non-chained caf?.
