    Abstract: COVID-19對於目前的社會、經濟、公共衛生、食品供應系統和勞資雙方等各種方面都造成了劇烈的衝擊。COVID-19也造成消費者在飲食習慣上有重大且長遠的改變,數以百萬計的餐飲業者正面臨著生存的威脅。本研究宗旨為幫助速食業者在面對COVID-19時,能有經營管理上的參考,以達到永續經營的目標。本研究以模糊德菲法(Fuzzy Delphi Method)及決策實驗室分析法(DEMATEL)作為 分析方法,以確保屬性的有效性與分析其屬性之間的相互關係。從分析中接受的構面為六項,以物聯網應用受經營管理和食品供應鏈(FSCs)的影響最深;接受的因素為二十項,以食品安全、市場定位、市場營銷策略、空間規劃、食物品質這五項最為重要。因為COVID-19疫情也凸顯出了經濟、社會和環境三者間相互影響的關係,這也強化企業對追求永續經營的目標與期待,在本研究中發現企業要永續經營的條件不僅只有前三項,科技的應用在企業的永續性上越來越被重視,在經營方面也加了不少分,所以本研究認為永續的三重底線應加上科技。本研究的問卷最初的屬性由於是從先前的文獻中獲得的,這可能使本研究的問卷框架受到限制。
    COVID-19 has caused a severe impact on the current society, economy, public health, food supply system, and labor and management. COVID-19 has also caused major and long-term changes in consumers' eating habits. Millions of catering industry operators are facing survival threats. The purpose of this research is to help the fast food industry to have operational management reference when facing COVID-19, so as to achieve the goal of sustainable operation. This research uses Fuzzy Delphi Method and Decision Laboratory Analysis Method (DEMATEL) as analysis methods to ensure the validity of attributes and analyze the interrelationship between their attributes. Six aspects are accepted from the analysis. The application of the Internet of Things is most affected by business management and food supply chains (FSCs); twenty factors are accepted, including food safety, market positioning, marketing strategies, and spatial planning. The five items of food quality are the most important. Because the COVID-19 epidemic has also highlighted the mutual influence of the economic, social, and environmental relations, it has also strengthened the goals and expectations of enterprises in pursuing sustainable operation. In this study, it is found that the conditions for sustainable operation of enterprises are not only In the first three items, the application of technology has been paid more and more attention to the sustainability of enterprises, and a lot of points have been added to the management. Therefore, this study believes that technology should be added to the triple bottom line of sustainability. The initial attributes of the questionnaire in this study were obtained from previous literature, which may limit the questionnaire framework of this study.
